Each programme is designed for a specific starting point and goal. Choose based on where you are now, not where you think you should be.
All programmes include hands-on practice, take-home resources, and ongoing support via email. Class sizes are deliberately small—maximum 8 participants—so everyone gets individual attention.
Foundation Kitchen Skills
Six weeks of comprehensive training covering everything from proper knife technique to understanding heat control. This programme is perfect for beginners or anyone who's been cooking by guesswork and wants to build proper foundations.
What you'll master:
- Knife skills and ingredient preparation
- Heat management across different cooking methods
- Building flavour through layering and timing
- Understanding how ingredients behave
- Recipe adaptation and improvisation
- Kitchen organisation and workflow
Programme includes:
- 12 hands-on sessions (twice weekly, 2.5 hours each)
- Maximum 8 participants per group
- All ingredients and equipment provided
- Comprehensive recipe workbook (50+ recipes)

When: Tuesday and Thursday evenings, 6:30-9:00pm
Seasonal Cooking Intensive
Four immersive Saturday sessions exploring British seasonal produce. Learn what to buy when, how to store it properly, and multiple ways to prepare it. We visit local markets, meet suppliers, and cook together based on what's freshest that day.

- 4 full Saturday sessions (9:00am-4:00pm)
- Morning market visits with supplier introductions

When: One Saturday per month over four months
Advanced Technique Workshop
For confident cooks ready to deepen their understanding. This programme covers complex techniques like fermentation, bread science, sauce construction, and pastry precision. We go deep into the theory and practice until these skills become second nature.

Baking Fundamentals
A focused programme on understanding baking science. Unlike cooking, baking requires precision—but that doesn't mean it has to be intimidating. Learn the principles behind successful baking and you'll troubleshoot failures before they happen.
